I must really love you guys and chicas to part with a recipe from my beloved recipe collection!

I’m just trying to do my best to help you along with your Memorial Day party plans so you won’t have to make that same old tired food this year.

This was originally a Hellmann’s Mayonnaise recipe, but I have worked and
re-worked this recipe until it suited my taste, as well as my family’s taste. They know this recipe well!

Double the ingredients as your guest list grows.


Herbed Potato Salad

Serves 4

6 red potatoes, cooled and cut into small quarters (with
skins on)
1/2 cup bottled Italian salad dressing
1 cup Hellmann’s Mayonnaise
1/2 cup Hellmann’s Dijonnaise Mustard Blend
3 hard-boiled eggs, chopped, with yolks discarded
1 green bell pepper, chopped
1/2 cup red onion, diced fine
1/4 cup dried parsley flakes
1 teaspoon dried dill weed
pinch of fresh basil, torn
pinch of fresh oregano, torn
1/2 teaspoon McCormick Seasoned Salt
1 teaspoon white pepper
1 Tablespoon sugar
1 teaspoon Worcestershire sauce

Toss cooled potato quarters (with skins on) in Italian dressing and set aside.

In another bowl, stir remaining ingredients until combined.
Pour dressing over potatoes and toss gently to coat. Cover; chill.

Yummy.
